Mexican Baked Chicken Wings

Spicy Blue Cheese Dressing

cup blue cheese dressing
1
can (4.5 oz) Old El Paso® chopped green chiles (undrained)
1
package (1 oz) Old El Paso® taco seasoning mix
2
tablespoons chopped fresh cilantro





Mexican Baked Chicken Wings

cup Gold Medal® all-purpose flour
1/4
cup butter, melted

package (48 oz) chicken wingettes and drummettes
Save $$$ on your favorite brands

Heat oven to 425°F. Line two 15x10x1-inch pans with foil. Spray foil generously with cooking spray. In small bowl, mix dressing, chiles, 1 tablespoon of the taco seasoning mix and the cilantro; refrigerate.

In gallon-size resealable food-storage plastic bag, mix flour and remaining taco seasoning mix. Add chicken to bag; seal, and shake to coat chicken. Place 1 inch apart in pans. Brush tops and sides of chicken with melted butter.

Bake 20 minutes. Turn chicken. Rotate pans, and bake 10 to 12 minutes longer or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Place chicken on paper towel-lined heatproof plate to drain. Transfer to serving platter. Serve with dressing.
EXPERT TIPS
Don't forget the sauce! Even if you are not a blue cheese fan, this zesty sauce really adds a fabulous pop of flavor in every bite!

Pilgrim Hat Cookies

16 chocolate wafer cookies (such as Nabisco Famous Chocolate Wafers)
1 tube orange frosting with piping tips
16 small peanut butter cups
Directions
Place cookies on work surface; squeeze a dime-size dot of frosting in center of each
Unwrap and invert peanut butter cups on frosting, pressing down gently
Using the round piping tip, pipe a "hat-band" with frosting around peanut butter cup and a square "buckle." Let frosting set before storing.

Orange Dreamsicle Fudge

Orange Dreamsicle Fudge

1 bag white chips (I used Nestle Premium white chips)
1 can white frosting (NOT whipped)
Crush Orange Ice Cream topping

Melt frosting in a saucepan over low heat (so to not burn it) until frosting is glossy. Add chips and continue cooking over low heat stirring until chips are melted and blended well with frosting. Pour contents out into a greased 8" x 8" pan (or parchment paper lined pan). Drizzle Orange Crush Ice Cream topping over top and if desired, swirl topping through fudge with a fork or toothpick. Cool in refrigerator until set. Cut fudge to desired sized pieces once set. This recipe can be altered to taste by using different flavors of chips and frosting.

White chips + lemon frosting = lemon fudge
Chocolate chips + fudge frosting = chocolate fudge
Peanut butter chips + white frosting = peanut butter fudge
Andes Mint chips + Chocolate frosting = Mint Chocolate Fudge
(I add a touch of mint extract to these)

Let your imagination run with this and make all sorts of unheard of fudge.

Penguins

Penguins


1 can Jumbo black olives
1 can Small (or Medium) black olives
1 8 oz. package of cream cheese
1 or 2 carrots

1. Slice the carrot into about 1/8th inch slices. Cut a V shape notch out of each slice (the big piece of the pie is the feet, the small slice is the beak).
2. Slit one Jumbo olive, lengthwise, and stuff with about 1 tsp. cream cheese (I rounded the teaspoons into little balls, first, and it helped a little).
3. Insert the small carrot wedge into the "x" on a small olive.
4. Line up the head, body, and feet, and secure with a toothpick.
5. Prepare to hear, "AWE!! How cute!"
6. Awe just do it, name your penguins.
You can use sliced red or green bell peppers for scarves.

Easy Mexican Casserole

Easy Mexican Casserole

1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
 1 can cream of chicken soup
1/2 cup water
 sour cream and salsa for serving
Preheat oven to 325 degrees.

 In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through. Grease a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly. Let sit for 5-10 minutes before serving. Top with sour cream and salsa.

Meatball Buns

1 can Pillsbury Grands Jr. Golden Layers refrigerated buttermilk or flaky biscuits 20 frozen cooked Italian-style meatballs (about 5 oz), thawed 4 sticks (1 oz each) string cheese, each cut into 5 pieces grated Parmesan cheese teaspoon Italian seasoning teaspoon garlic powder or garlic salt 1 cup marinara sauce, heated

Directions: 1 Heat oven to 375°F. Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Press each biscuit layer into 3-inch round. 2 Place 1 meatball and 1 string cheese piece in center of each dough round. Wrap dough around meatball and cheese, pressing edges to seal. In ungreased 8- or 9-inch round cake pan, place seam side down in single layer. 3 Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder. 4 Bake 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center. Serve warm biscuits with warm marinara sauce for dipping.

CRACK ROLLS
Try To Eat Just One!!!!

1 loaf (16 ounces) thinly sliced white bread, crusts removed
1 package (8 ounces) cream cheese, softened
3/4 cup confectioners sugar
1 cup sugar
1-1/2 teaspoon ground cinnamon
3/4 cup butter, melted


Flatten bread with a rolling-pin. In a bowl, combine cream cheese and confectioners’ sugar. In another bowl, combine sugar and cinnamon; set aside. Spread about 1 tablespoon of cheese mixture on each slice of bread. Roll up, jelly roll style. Dip in melted butter, then in cinnamon-sugar. Place on an ungreased baking sheet.
Bake at 350° for 20 minutes or until golden brown.

Yield: 16 roll-ups. Good warm or cold. ADDICTING!
