Peach Cobbler


 Peach Cobbler

Bake time: 60 min


Ingredients:

6 to 7 fresh peaches, peeled, pitted, and sliced
1/2 cup unsalted butter 2 sticks
1 cup Bisquick Baking Mix
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup whole milk
1 1/4 cups granulated sugar
  vanilla bean ice cream



Preparation:

Preheat oven to 350 degrees F. Butter a 10-inch glass pie plate or a 9X9-inch rectangular pan.

Place butter in a microwave-safe dish and melt; set aside.

In a large mixing bowl, whisk together the Bisquick Baking Mix, cinnamon, and nutmeg. Whisk in the milk and then add the melted butter, mixing thoroughly. Pour the batter into the prepared pie plate.

In a separate bowl, stir together the sliced peach and the sugar. Spoon the peach mixture over the top of the batter as evenly as possible.

Bake, uncovered, 50 to 60 or until crust is bubbly and golden in color.
well maybe a tin foil edge wrap so you get crispier corners*
Remove from oven and let cool on a wire rack for at least 10 minutes before serving.

Serve either warm or room temperature. To serve, top with vanilla ice cream or whipped cream.

Makes 4 servings.
I 've have been known to make this with Apples in the Fall just add a little extra spices.
Even in the Winter with a bag of frozen berries.

*take tin foil  make a lid for your pan cut out all but one inch

Hawaiian Dream Cake

Hawaiian Dream Cake

1 package yellow cake mix
1 (20 oz.) can crushed pineapple, drained, reserve juice
1 8-ounce package cream cheese
1 (3-oz.) pkg. instant vanilla pudding
1 cup cold milk
1 (9-ounce) container cool whip
Nuts and coconut

Prepare cake mix according to package directions, using the reserved pineapple juice and water for the liquid called for in the directions. Bake at 350° F. for about 35 minutes in a greased and floured 15 x 10 x 1 inch jelly roll (I used a 9-/12 x 13 pan). Cool in pan, set aside.
In a large bowl blend together cream cheese, pudding mix and milk until smooth. Fold in drained pineapple and spread over top of cake. Cover with whipped topping and sprinkle with nuts and coconut. Refrigerate.

Chicken Crescent Rolls



2 cans of low fat refrigerator crescents
1 can of healthy low sodium cream of chicken soup(26oz)
1 cup fat free cheddar cheese
2 boneless skinless chicken breast

I boil my chicken breast then shred, roll out each individual crescent, place about a Tbsp of shredded chicken in center and roll it up.

Bake on 350 for about 5 minutes until just starting to turn golden. Pour Cream of chicken over the top bake an additional 10 min top with cheddar cheese and bake for 10 more minutes.

Carne Asada tacos con arroz y frioles!







To start a start a pot of beans that i soaked over night .
Put in 3 cups of beans 6-8 cups water  and about 1/2 to 3/4 cup manteca
Simmer low boiling, check water levels thru out the cooking process
add  water as needed



WHEN THE BEANS ARE COOKED  we are going to re fry them by straining them keeping the juice
Taking some manteca lard  heating it up in a fry pan adding a scoop of beans to it frying and smashing at the same time adding some juice to thin it out, The beans thicken as they cool.
Cook your beef after dicing as small as possible dding spices s desired.
The corn tortia shell can be cooked or purchased  that way.

fried chicken legs


In our family my sister-in-law is famous for her fried chicken

so i tried to come close. Not that i ever could Linda!
 I Start my oil in my electric fry pan half way full of oil.
 So all i did was flour salt and pepper garlic powder paprika chicken bouillon in a grocery bag shake it up ,rinse the legs off, place them in the pan,cover, in twenty minutes i rotate them, lid on for about ten minutes of it then i like to see my chicken
sometimes they need to be turned a little or smaller ones removed before they burn.
