Carne Asada tacos con arroz y frioles!







To start a start a pot of beans that i soaked over night .
Put in 3 cups of beans 6-8 cups water  and about 1/2 to 3/4 cup manteca
Simmer low boiling, check water levels thru out the cooking process
add  water as needed



WHEN THE BEANS ARE COOKED  we are going to re fry them by straining them keeping the juice
Taking some manteca lard  heating it up in a fry pan adding a scoop of beans to it frying and smashing at the same time adding some juice to thin it out, The beans thicken as they cool.
Cook your beef after dicing as small as possible dding spices s desired.
The corn tortia shell can be cooked or purchased  that way.

fried chicken legs


In our family my sister-in-law is famous for her fried chicken

so i tried to come close. Not that i ever could Linda!
 I Start my oil in my electric fry pan half way full of oil.
 So all i did was flour salt and pepper garlic powder paprika chicken bouillon in a grocery bag shake it up ,rinse the legs off, place them in the pan,cover, in twenty minutes i rotate them, lid on for about ten minutes of it then i like to see my chicken
sometimes they need to be turned a little or smaller ones removed before they burn.

Chile Verde .............Green Chili




                                Chile Verde  sorta  green chili to a Vanilla


 ok what we have here is

Tomatillos (toe-ma-tee-ohs)


they are like tomatoes:

Tomatillos are also called "tomate verde" in Mexico (which means green tomato) and are considered a staple in Mexican cooking. Tomatillo is a member of the nightshade family, related to tomatoes. It now grows everywhere in the Western Hemisphere and is common in Texas gardens.

Here in cali they grow in our gardens to!

I use pork shoulder or butt you could use chicken or beef.

I brown my butt (Lol) in my cast iron with manteca ( a mexican lard) onions, black pepper, chili powder, ground cumin, garlic, you can use what you and your family like spice and amounts. I like to put just about anything green including chili"s, zucchini even green apples! I learned long ago my kids only hated what they saw and loved what they couldn't.






I would cook this down with chicken broth and water on the stove with a lid for hours, now you could cook it in a crock pot or in the oven you could even cut it down to small pieces then cook it in a shorter amount of time.



As you can see I am preparing a pot of pinto beans for home-made refried beans.



After my butt has cooked down into a "falls apart, no need to cut" state then de bone and remove fat.

At this point i would prepare my veggies and fruits. Tomatillos need to be peeled the outer skin removes easily, then you can quarter or leave whole and I like to use the drippings or broth and  cook done (reduce) until it becomes a gravy feel.

Serve with refried beans, rice, tortia's avocado's, shredded cabbage, diced tomatoes, La Creama (sour cream) and some Sangria.

Chicken Tortilla Soup



Mmmmm so Good, Guaranteed to Make You Feel Better!



I like thigh meat or breasts of we are Talking Chicken although Turkey would be Delicious,

so cook your chicken with some onions and veggies we like peppers sometimes zucchini,squash whatever i need to cook up or sneak in! I also put in a large can of stewed tomatoes.

Spices are the key i use paprika chili powder cumin and be generous with these use alot!


Do Not throw out the broth you made just separate the chicken so you can de- skin and de -bone the chicken if needed.


You use corn tortillas  as the noodles we like white corn tortillas  i slice them thinly by grabbing a stack of about ten slice with sharp knife about 1/4 to 1/2 inch wide,

I have about 2 inches of hot oil in my pan and drop the "noodles" in stir them so they cook like egg noodles.after about a minute strain them then put them on a paper toweled  plate.


Garnishing is the Fun Part  you can use any or all of the following


                          cheddar cheese, sour cream cilantro, la cremea
